It's because of two things - 1, a cows front legs are shorter than it's back legs, and when it moves faster than a slow meander, it moves both front legs at once. Thus, if you are being chased by a bull, run downhill (steepest one you can find - too bad if you are in a flat paddock) as it speeds you up, and slows the bull down (doesn't stop it unfortunately).
