Have to say, though, that they are a trifle too sweet for an everyday lunchbox filler but for the odd treat they fit the bill very nicely. Going to have to be an "odd treat" now anyway, as I have cleaned out all the rhubarb and am not likely to get any more until next spring. Damn!! :p Tell Mrs B thanks very much for the recipe and if she has any more family favourites it would be good to have them. :thumbs: |

| 339311 | 2005-04-04 03:02:00 | Something a bit different:- Rhubarb Fritters From "Life's Little Rhubarb Cookbook: 101 Rhubarb Recipes," by Joan Bestwick (Avery, $11.95) 1 cup all-purpose flour 1 cup plus 1 tablespoon sugar 1/2 teaspoon salt 2 eggs separated 1/2 cup milk 1 tablespoon melted butter 2 cups finely chopped rhubarb Oil for deep frying Confectioners sugar In a medium bowl combine flour, 1 cup sugar, salt. In another bowl, whisk egg yolks, milk and butter. Gradually add this mixture to the dry ingredients, stirring until smooth. Toss in remaining sugar; gently stir into batter. In a mixing bowl, beat egg whites until stiff, fold into batter, add rhubarb, mix well. In an electric skillet or deep fryer, heat oil to 375 degrees. Drop batter by tablespoon into oil. Fry a few at a time, turning with a slotted spoon until golden brown. Drain on paper towels. Dust with confectioners sugar, serve warm. Makes about 2 dozen or 6 servings. Per serving: 375 calories; 16 g fat (3.5 g saturated fat; 38 percent calories from fat); 53.9 g carbohydrates; 79 mg cholesterol; 248 mg sodium; 5.3 g protein; 1.3 g fiber. |

I best prepare to make lots of fine garden-rhubarb feasts to get through the next year. :D My rhubarb hasn't been in the slightest bit fussy where their home is. In fact I'm ashamed to say that the poor things have had appalling treatment in my hands, what with being yanked out of their comfy beds and plonked rather unceremoniously in another location at least five or six times. To my immense surprise the little darlings just shrug their frilly leaves and get on with putting their roots down and stalks up until the next dislocation. They honestly have been the most easiest vege/fruit I have tried to grow, after my prized peach trees, and I have no green fingers I can assure you. :D Once I even threw a couple of rhubarb plants on the compost heap when I had no room to plant them elsewhere and when I turned around again they were quite happily growing away in there. :p If you want to treat yours with TLC you can't go wrong with bedding them in some nice yummy compost in a fairly sunny and well-drained situation. My garden is horribly dry most of the time and I'm pretty lazy about watering so if you can provide a regular drink they'll thank you even more. :thumbs: Happy gardening! :D |
