yeah but a kitchen knife isn't a cool looking weapon.
I dunno about that.. I've seen Amercian Psyco. I think a good big kitchen knife looks kinda cool in the "I've gone off the deep end" kind of way. Which is probably what you want someone to think if you are using it as a weapon.

I've done a couple of knife defense classes through my martial arts club, and every one of them has said at the start: If they have a blade and you don't.

1) Run
2) If you can't run, odds are you will get cut, be prepared for this to happen.
3) <insert pretty disarm/counter moves here>

I'm not sure a double edge really matters in most cases. But it does substantially reduce the non agressive functions of that blade.
