Scene: A cafe. One table is occupied by a group of Vikings with horned
helmets on. A man and Bruce Buckman enter.

Man (Eric Idle): You sit here, dear.
Bruce (Graham Chapman in drag): All right.
Man (to Waitress): Morning!
Waitress (Terry Jones, in drag as a bit of a rat-bag): Morning!
Man: Well, what've you got?
Waitress: Well, there's egg and bacon; egg sausage and bacon; egg and spam;
egg bacon and spam; egg bacon sausage and spam; spam bacon sausage
and spam; spam egg spam spam bacon and spam; spam sausage spam spam
bacon spam tomato and spam;
Vikings (starting to chant): Spam spam spam spam...
Waitress: ...spam spam spam egg and spam; spam spam spam spam spam spam baked
beans spam spam spam...
Vikings (singing): Spam! Lovely spam! Lovely spam!
Waitress: ...or Lobster Thermidor a Crevette with a mornay sauce served in a
Provencale manner with shallots and aubergines garnished with
truffle pate, brandy and with a fried egg on top and spam.
Bruce: Have you got anything without spam?
Waitress: Well, there's spam egg sausage and spam, that's not got much spam in
it.
Bruce: I don't want ANY spam!
Man: Why can't she have egg bacon spam and sausage?
Bruce: THAT'S got spam in it!
Man: Hasn't got as much spam in it as spam egg sausage and spam, has it?
Vikings: Spam spam spam spam (crescendo through next few lines)
Bruce: Could you do the egg bacon spam and sausage without the spam then?
Waitress: Urgghh!
Bruce: What do you mean 'Urgghh'? I don't like spam!
Vikings: Lovely spam! Wonderful spam!)
Waitress: Shut up!
Vikings: Lovely spam! Wonderful spam!
Waitress: Shut up! (Vikings stop) Bloody Vikings! You can't have egg bacon
spam and sausage without the spam.
Bruce (shrieks): I don't like spam

Hey, I have fond memories of Spam. We used to take tins of it way with us on our family boat when i was a kid. It was a good incentive to actually catch fish.

Ingredients:

* Chopped pork shoulder meat with ham meat added.
* Salt (for binding, flavour, and firmness)
* Water (to help in mixing)
* Sugar (for flavour)
* Sodium Nitrite (for colour and as a preservative)

Cooking Method

The ingredients are ground to a medium-coarse texture. Spices are then added to enhance the product's natural flavour. After the blending process is completed, the meat is mechanically filled into cans, sealed, and cooked in a ret ort oven.

Mmmm....Rubbish meat in a can, flavoured with 19 teaspoons of salt.

CHICKEN VINDALOO

www.epicurious.com

3 cups chopped onions
1 1/2 cups chopped seeded tomatoes (about 4 medium)
2 1/2 tablespoons distilled white vinegar
1 large garlic clove, chopped
1 teaspoon minced peeled fresh ginger
1 teaspoon tomato paste
1 teaspoon garam masala*
1 teaspoon ground turmeric
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon (or more) cayenne pepper
2 tablespoons vegetable oil
6 skinless boneless chicken thighs, cut into 1- to 1 1/2-inch pieces
1 1/2 pounds russet potatoes, peeled, cut into 1-inch pieces
1 1/2 cups low-salt chicken broth or water

Blend first 11 ingredients and 1/4 teaspoon cayenne pepper in processor until paste forms. Heat oil in heavy large pot over medium-high heat. Add paste from processor and cook until golden, stirring occasionally, about 3 minutes. Add chicken and potatoes; sauté 5 minutes. Add broth; bring to boil. Reduce heat to medium-low; cover and simmer until potatoes are tender, stirring occasionally, about 15 minutes. Uncover and simmer until chicken is cooked through, about 5 minutes longer. Season with more cayenne, if desired, and salt and pepper.

*A spice mixture available at Indian markets, some specialty foods stores, and many supermarkets. To substitute, mix 3/4 teaspoon ground cumin, 3/4 teaspoon ground coriander, 1/2 teaspoon ground pepper, 1/2 teaspoon ground cardamom, 1/4 teaspoon ground cloves, and 1/4 teaspoon ground cinnamon; use 1 teaspoon of mixture.

Makes 4 servings.
