456904 2006-05-23 06:06:00 Mr Milky - my advice is... ignore all the negatives posted above, and stick with the positives: Assuming you know how to cook and know how to maintain decent health standards and have appropriate certificates to prove it and have an awareness of the market where you're about to set up shop and have an understanding of the fickleness of customers and know how to attract a broader customer clientele and know how to make non-Watties tomato sauce and know a bit about interior design and are happy to run at a loss because you've got lots of capital... well then it's as easy as making a great pie.

if he knew all that, he wouldn't be asking here. the idea is to jolt this guy into reality. so many people go into into biz & only last a few months. one lady who was a chemist bought one of my folks shops which was at its peak, went bust in 6 months - because she didn't know how to talk to customers. My folks spent a few years with that one, I worked there in my holidays, got $400 for just a few days - it was so profitable - then she stuffed it up.
i also did my OE in aussie - working for numerous restaurants & bistros just to get money - you get to learn a hell of a lot. i had to do catering for functions & weddings.
you need to have experience, experience & oh, experience.
but hey it's easy as pie. which my poor old mum spent 6 days a week making.

I hope you're talking short term Greg... no-one wants to be in business to make a loss! :)

Hate to mention paperwork, but you gotta have a good system for it all, and there will be plenty of it! Hygiene standards, business setup (equipment purchase, property lease/ shopfitting), setting up business structure, finance agreements, accounting, tax, employing (and occasionally firing) staff. :waughh: And that's after you've settled on a theme/feel and location...

Other thing to consider is the IRD, and they offer a free advisory service for the basic bookkeeping/ record keeping skills and requirements.

It's an expensive business, and plenty fall by the wayside, but if you work hard enough and get the right combination of ambience, price and location (and obviously great food! lol ) you should do well. Good luck!

456908 2006-05-23 14:32:00 I do have food preparation experience, as I've worked in my parents’ busy take-away store for a few years back in Australia, and my fiancé has worked in various Japanese restaurants . I just haven't had any business experience in New Zealand, so I'm not too sure about the requirements, such as Food Safety cert's and business registration .
Location isn't a problem, as that is what prompted me to consider opening a sushi bar in the area, as there are lots of office buildings, and various shops and hardly any takeaways and no sushi bars .
As it will be a sushi bar there won’t be too much expense lost on kitchen ware . Also I'm not worried about the interior design, as I am also a designer and will be using the shop to also showcase my design skills, kind of a sushi bar/ gallery .

The reason I'm asking in pressf1's off-topic forum is that after numerous google searches I came up with hardly any info, and I've gained great advice from these forums before, not just computer related but NZ related in general .

Thanks for the advice all, I will look into business mentors and of course my first stop was always going to be the local council .

456909 2006-05-23 14:48:00 Great stuff Mr Milk! Wish you all the best. And if/when you get it set up let us know the location so I can visit for a meal. (hopefully it's in East Auckland)

Sushi... mmmmm :)

456910 2006-05-23 20:55:00 Getting a food hygiene cert is not hard to get. Ask the council about places where they offer them.
Places like some tertiary which have a food based facility usually have classes for hygiene cert.
The overall questions are pretty simple and once you get one, you got it for life.
