499263 2006-11-15 04:08:00 Just for something completely different - my recipe for lemon cake:

4 Ozs Butter
1 Cup White Sugar, plus another 1/4 cup for topping
2 Eggs
1 1/2 Cups Flour
2 Medium Sized Lemons
1/2 Cup Milk
1 1/2 tsp Baking Powder

1. Cream the butter and sugar

2. Add eggs, mix in thoroughly

3. Add the flour, milk, baking powder, and the grated rind from the lemons (keep a little bit for topping)

4. Bake at 180C for 45 mins

5. Mix the remaining 1/4 cup sugar with the juice from the lemons

6. As soon as the cake is removed from the oven, sprinkle the remaining lemon rind over the top, then pour the sugar & lemon juice mixture evenly over the cake. Note that the cake should look a little drowned, but as long as you don't have any permanent puddles on the top it should be fine. Depending on the size of the lemons, you may not need all the juice.

7. Leave to cool in the tin until completely cold - if you try to remove it while hot, the cake is extremely hard to get out without breaking.

8. Store in an airtight container (preferably not in the fridge) until ready to eat.

2 Cups Plain Flour
1 Teaspoon Baking Powder

150 Grams Softened Butter
1/2 Cup Sugar

2 Eggs
1 Cup Mashed Ripe Bananas

3 Tablespoons Milk
1 Teaspoon Baking Soda


Method.

Preheat the oven to about 150 degrees celcius.
Grease a 20cm-30cm ring cake tin OR 12 standard sized muffin tins.

Sift the flour and baking powder. Do it twice.

In a food processor mix the sugar and butter for about 5 minutes until light and fluffy, it should turn from "butter yellow" to a very white colour.

Then add the eggs and mix until combined into the mixture.

Once combined add the banana and mix thoroughly.

Now mix the milk and baking soda and add with the flour into the banana mixture.

Mix on High until the flour has JUST combined into the banana mixture.

Pour into tins and bake for about 25-40 minutes until cooked.

Serve hot with vanilla ice cream or serve cold with a nice cuppa!

But I know how you feel Cicero,

I'm allergic to wheat, lactose intolerant- so no butter, don't eat sugar, salt, don't drink, have just given up smoking and then my doctor tells me that my cholesterol is too high and I should give up carbohydrates!!!!

Let me tell you- there ain't many vices left after that, but I make the most of the ones I have. There's only so much fun you can have eating nuts though ;)
