Watch out that your shiny new mortar doesn't drop out for the same reason as the original did (unless that was due to the rigours of old age). Dampening (SSD), done properly, can be as effective as chemical additives and bonding agents (dry excess moisture off with a towl). The mixed mortar has to be as dry as possible while remaining workable.

Re structure, as long as the mortar isn't falling out due to movement in the chimney you should be ok, but don't take my say so, I'm not an engineer.
