Actually the way I heard it, it's not the charcoal fuel that's the problem, but the burnt offerings that you eat when the meat gets charred .

It tends to turn up the nitrosomines (N-butyl-N-(4-hydroxibutyl)) percentages in the food . . . especially the fat which likes to burn easier in direct flames . . . and that's the carcinogen involved .

The first laboratory emphasis for testing was on the heterocyclic amines being formed in starches that got overheated (ie: Bar-b-que)

Mesothelial (ovarian) cancers have been reported with the intro-adduction of (nitrous oxide) permutations caused by overheated proteins in foods fed to test animals, obviously female .

The area of clinical studies are very incomplete yet, but it might be wise to watch this situation and use an avoidance strategy until the results are better understood .

I never allow my eggs to get burned, brown edges on them (that lace-y, paper-y cellophane edge) as I baste them when frying .

Burned beef ribs or pork chops on the grill are an exception . . . but we have to die from SOMETHING, right?

yeah that's right, i propably should have worded that better:rolleyes:

just last night i had lamb chops cooked on the bbq, the burning fat was so intense i actually turned the gas off and left them to it . chop was actually on fire!

sure enough they were black and tasty with delicious moist meat with a hit of pink to it - and the fat! crispy shell with liquid insides:D ohh it was bliss *drool*
