570095 2007-07-19 05:39:00 Yep, but they are very expensive. I work at the checkouts at Countdown and sometimes I get customers buying 150g packs of shaved mozzarella cheese for $6.

I'm sure.
However you just buy NZ Mozzarella, in blocks, not shaved anything or ready grted or whatever.

570096 2007-07-19 05:41:00 Most cheeses are thrown out when they grow a beard. Shaving them seems a bit too economical. Graham L (2)
570097 2007-07-19 06:34:00 I'm looking for the same type of cheese that pizza hut uses, not salty, not much cheese taste, anyone knows what is the name of that cheese? Is it available in supermarkets?

From what I can gather from someone who works in a supermarket deli the cheese they use at Pizza Hut and elsewhere is simlpy your common or garden "rubber" type cheese which comes in a square pack in various flavours. It appears they simply add ingredients to make it more appealing and to change the flavour for the different types of Pizzza's, such as a little sprinkling of whatever cheese you have ordered. This seems to be the norm in the fast food takeaway outlets. Makes it cheap for them and you are satisfied with the taste.

Anyway, as mentioned above, what you're probably after is mozzarella; a rather bland cheese, used mainly for its consistency rather than its flavour. It's quite boring when uncooked, unless you can find an authentic buffalo's milk variety, but it's minimal flavour and texture comes into its own when baked. Not recommended in wet dishes, (eg sauces such as made with macaroni cheese) where cheddar is the king.

A useful source of info on the cheese can be found here (en.wikipedia.org).

570099 2007-07-19 15:54:00 They use a mix 50%-50% of Mozzarella and Monterey Jack .

Chuck-E-Cheese uses almost 100% Jack .

Real Mozzarella is made from goat milk . Uncooked is rather grainy and dry in the mouth, but cooking plasticizes it and makes it a lot smoother with a nutty flavor . . . something to do with enzymes and lactose I think .

If youse guys are comparing pizzas from such places, then I suggest that you have not had a real pizza anyway . . . they only exist in New York and the people who eat them there are willing to suffer living in New York City just to have access to the pizzas .

We DO NOT get good pizzas in California either . . . . although there is one place that gets pretty good at a replica: Godfather's Pizza (http://www . godfathers . com/) .

I'd say real pizzas exist only in Italy.
And my house because I make my own, to the Italian model.

These things with weird toppings are not real pizzas.

If you like Italian style pizzas, next time you are in ChCh you may want to try the cafe at Mediterranean Foods (Tuam St?). Apart from stocking up on our fav Italian foodstuffs and wine (at cheap prices!), last time I went there we had pizzas which were to the Italian style. Veeeerrrrry thin, with a minimum of sparsely applied toppings. Luverly for lunch with a nice glass of Italian wine.

Toppings like mushrooms, or artichokes and blue cheese, or just tomato and mozzarella. The tomato is a mere smear of topping, not like the gloopy mess you get in American style "pizzas", and the mozzarella is in thin slices.

Hmmm, must go back soon. :-)

570102 2007-07-19 21:48:00 Didn't try a California pizza, but Noah's Bagels, and Ghiradelli Hot Fudge Sundae are definitely worth visiting San Francisco for. Richard (739)

Which Italian model would that be? Neapolitans think that pizza from other regions isn't real too :)

Peasant food isn't going to be too thin and too sparsely applied.

Joe - Real mozzarella is from water buffalo milk.
