The basics are, no matter what ingredients, they have to be fresh fresh fresh. The rolling technique has to be practised, but equally important is to have a moist knife when slicing the rolls. Japanese rice vinegar is important too, but not essential - cider vinegar is a good substitute. And of course the rice must be short grain... Italian short grains can be used as a substitute if Japanese short grain isn't available. As for the fillings, anything goes - as per my previous post, smoked salmon, cucumber (de-seeded) and avo is my favourite. But unsmoked salmon is just as good, and so is raw tuna and/or tinned tuna and smoked chicken And carrot slivers are great too. It's important to have the essential sides - wasabi, pickled ginger and best quality soy sauce. Kikkoman low sodium is great, but if you can get a wheat-free variety that is absolutely tops! The head tilt is a bit gay but yeah . . . . . its as good as your going to get and its only a head shot, one that I used for my MSN .
