If I make something like Scallops and Linguine, I use a whole bulb for flavor . . and that's just a two-person meal with no leftovers . NOT one or two cloves . . . I am talking a full bulb with all the little cloves in it . . complete . Peeled, of course! |

Personally I would prefer the flavour of the scallops to the garlic (why ruin an already good flavour?) - that is assuming you are using the genuine article with the orange tongue Joe. |

| 627280 | 2008-01-04 00:20:00 | My mother has always extolled the virtues of garlic (and onions) but was always careful to make certain that everyone had their fair share firstly for the health benefits but also so no offence was caused to any other family members. (Phew!) Just the same as any other food, you can have too much but I have yet to reach that stage. Garlic, at one stage in NZ, was similar to sour cream and decent wine - "foreign muck!" Those were the days of meat and two veg. We are so fortunate to have many people from so many different countries bringing us new foods to tempt our palates. |

| 627282 | 2008-01-04 00:26:00 | You cook anything to your own taste. However, I would suggest if there is more than one at the table, you consult with them. I do use Garlic in cooking at times. My Lamb roast has nearly finished cooking and has embedded garlic. Do you want to lose the flavour of the original ingredients? That was why curry was important in India as the meat was a little off some years back. In my view any herb, spice is supposed to enhance flavour rather than detract from the meal as a whole. Garlic has its place as does Curry and I use both in moderate amounts. I went to a place where I was served a curry that was rather hot. I was a little surprised the plate did not melt. Do you put garlic in your wine glass before adding a nice wine? Too much garlic is where the other person(s) complain. Use a whole teaspoon of cayenne pepper in your next meal maybe. Have water on tap! |
