| 646028 | 2008-03-03 22:05:00 | Barbecue Recipes!!!! Posters to this forum must have between us a lot of favourite things we inflict on family and others during summer. Here are some of mine. Barbecued fillet steak Wrap around each piece of fillet either prosciutto or bacon. This can be held in place with either cotton string or toothpicks. Grill until medium rare and the bacon/prosciutto is crisp. (My secret with steak is to take it off 2 minutes before I think it is cooked) Serve with mushroom sauce and poatoes as below. Barbecued potatoes Use Agria potatoes scrubbed and cut to uniform size, then boil till nearly cooked Place on barbecue grill to complete cooking In a small pot on the barbecue mix about equal quantities of soft brown sugar and butter. A bit of curry powder can be added if desired. Heat until caramelised but don't overcook as it will separate. Spoon this sauce over the potatoes while they are still cooking, it will go crispy and yum! Serve with a large glass of red wine. (Reds can be slightly chilled in really hot weather) Barbecued bananas Place on the grill one large unpeeled banana per person Cook until skin is black and inside is soft Lay banana on a flat plate and slice skin, then peel out to form a basin shape Sprinkle with soft brown sugar while still hot Drizzle liberally with rum, I said liberally, then a dollop of whipped cream. This is luscious, and it is permitted to lick your plate afterwards Pita bread lunch Slice garlic pita bread right around and spread the garlic butter contained inside Lightly toast on the grill Grill some bacon rashers to taste (I like it crisp) Spread the bottom slice of pita with avocado and add some bacon Cover with lettuce and tomato Spread top slice with cranberry jelly the put it all together to make a sandwich. My favourite lunch in summer and goes well with a Stella or a Steinie! |

| 646033 | 2008-03-04 00:54:00 | - Sirlion steaks cooked medium-rare - Vine-tomato, mozzarella & basil salad with drizzled with some nice, grassy Moutere Grove EV olive oil & balsamic - Par-boiled potatoes tossed in garlic, rosemary, and lemon zest, sliced on my Mandolin (buggers the strings really quick tho! :D ) and grilled lightly - Ice cold Stella or a crisp wee sauvignon blanc Heaven . . . . . :) If I'm pushing the boat out for company (SWMBO's parents!), then I bone out a leg of lamb, butterfly it, and smear both sides with a mixture of dijon mustard, roast garlic, rosemary and a dot of worcester sauce, and bbq on a low heat for 30 minutes or so . . . . great in sammies the next day too!! |

| 646035 | 2008-03-04 01:33:00 | Just thought of another one.......(some of Beetle's dots) Pork Pork belly cooked really slowly over the grill, 2 outside burners going only, covered with the hood. This can cook for anything up to 2 hours at a low temp after which the crackling is just irresistible. Works too with any pork roast Hasselback potatoes Not a BBQ recipe but still a favourite Slice peeled Agria potatoes 3/4 way through in quarter inch slices. (Sit potato in a tablespoon) Pour on olive oil then generous knobs of butter on each potato. Sprinkle with salt. Bake in medium oven until all crispy and brown and lovely No, I don't weigh 150kg! :o |
