The AC will still work...although the Defrost won't work as well as you won't be able to reheat the air after it comes thru the evaporator to drive out the moisture before it is directed on the windshield.

If indeed you have a climate-control system, it will just ask for heat to moderate the temp settings, never achieving the correct temp...but that doesn't mean it won't try very hard.

It won't much noticeable difference to the passengers, but you may have to get the control panel psychoanalyzed afterwards.
