Well I never... Thanks - it has always puzzled my aunts but they did it anyway to everyone else's disbelief.

703632 2008-09-10 09:04:00 beetle - off topic I know, but does your Mum drop her sponges on the floor (in the tin of course!) as she takes them out of the oven? Deliberately I mean :)

If she does, does she know why that is done? All my aunties and cousins do this, but I don't know how wide spread the practice is, and why it works - it defies reason.

It could be like the lady who always cut off the end of the leg of lamb when roasting and cooked it beside the bigger part. She always wondered why she did that and went back to ask her mum why she had taught her to do it that way. Her mum said I don't know we will have to ask grandma. They did and grandma said she had just done that to fit the joint into the oven, the oven being rather smaller in those days ! :D

However, re dropping the sponge on the floor, has apparently more prosaic reasoning - it is fairly common practice and may be to do with getting air into the sponge.

4 ounces butter
1 desertspoon Golden syrup
1 teaspoon baking soda
1 tablespoon milk
1 cup sugar

melt together - do not boil.

let cool

add dry ingrediants and vanilla

1 teaspoon vanilla essence
8 ounces flour
1/2 cup sultanas
1/2 cup walnuts optional.

place teaspoon lots onto trays, (plenty room between each drop)
cool oven about 150 for 15 - 30 mins till cooked.

We tried the biscuit recipe today, and the result was very successful. Very crisp and a nice flavour, but possibly they were overdone by a couple of minutes, so I will reduce the cooking time a wee bit next time. (22mins at 150 degrees)

Also I'll make them larger, 35 biscuits out of the above quantity was too many?

The only diffence i can remember is my aunt and mum made the biscuits much larger, as often they were used for smoko's for the shearers or the people helping with the docking. so more substantial food was needed, like chocolate cake made in a roast dish, and sultana cakes, peanut brownies, home made gingernuts........yum are some i remember, oh and a constant lot of pikelets or scones as well. and apple muffins......
mum still makes a lot of these items, but in smaller quantities now... and her biscuit fudge ....
maybe i need to go do some baking... :D

Having had a couple more with the evening cup of tea, they are definitely a bit overdone, so that will be corrected next time. Also, in Myth's original post, they were thought to be a soft biscuit, which mine are not, so a shorter cooking time will help that, plus making them bigger.

703639 2008-09-28 16:31:00 Yeah I have tried that recipe too. Though being the first time I have baked in 20 years (since Home Ec in school) my efforts weren't quite as successful (but still quite edible)

Mum also sent me a recipe, which I have still to try. Her recipe has less sugar, but more golden syrup. And no raisins (might add those and see what happens :D).
