I quite frequently get rather hungry in the evenings. It doesnt help my stomach problems, but I love a good feed around 10PM+

Anyway, I seem to go through "phases" of cooking one thing or another.

For a while it was Pancakes (They were yum, quick, and easy!)
Then after that it was Hot n Spicy Instant Noodles
Currently Im enjoying Chicken Fried Rice (Just grab a tin of Chop Chop Chicken, add some rice you prepared earlier, peas & egg and you're away laughing!)

Whats your fav dish to prepare? Do you do it only for dinner, or do you do late-night feasts also?

734956 2009-01-04 10:34:00 I do "smashed potatoes" lately .

Boil some of those gourmet potatoes (in their jackets) until they are soft and mashable .

Take them out of the pot, put them on an oiled oven tray, and mash them (just a single push with the spud masher) until they are about a centimetre thick .

Give them a light spray with oil (rice bran oil is good), sprinkle them with fresh, coarse-ground pepper and rock salt .

Then throw the tray in the oven at 220C for 15-20 minutes (until they start getting crispy) .

You could also sprinkle with garlic or cayenne or balsamic vinegar .

Nice quick verson of roast potatoes . . . .

They are excellent cold too - if you can stop yourself scoffing them!!

734957 2009-01-04 10:35:00 Hot and spicy tuna. Grab a 425g can of tuna in oil. Then go to an Asian shop and look for 'Cap Ibu Sambal Terasi". That's the stuff that's going to turn plain old boring tuna into something you'll want to eat all day and night. Here I found a pic:

I don't know how much heat you can handle, so you may want to buy its less hot variant.

Finely chop half an onion (I personally use one and a half because I love onion) and crush two cloves of garlic. Using some of the oil from the tuna can, fry the onion and garlic on medium heat until they turn brown and then put the tuna and the rest of the oil in. Cook the tuna at med-high heat for about 3 minutes, then stir in at least 1 tablespoon of the Sambal Terasi (I personally use two). Then keep the tuna at the same med-high heat for another 3-6 minutes, depending if you like it moist or dry. Stir occasionally to prevent it sticking to the bottom.

Serve with rice or use it as a tuna sandwich filling.

Winter - Toasted sandwich. Any ingredients, left over roast or stew is the best. :thumbs:

I'm feeling a little peckish right now actually...

I always buy whole chickens normally size 20, marinate and put it in the oven around 5pm and its ready by 7pm .. so its like dinner and snack as well during the night and the next day and when thats gone.... put in another.. :drool

734961 2009-01-04 11:12:00 Spicy Chips:

Frozen Chips (Shoestring is best) + oil + about 4 tablespoons of chilli powder + Chilli Flakes + Mixed herbs + more oil to finish.

In the over for 10 mins then 2 more minutes with the door open to get the nice and crisp, top off with some Chilli sauce and Enjoy!!! :D

734963 2009-01-04 12:01:00 That reminds me, we have some Shin Ramyun & Indomie Mi Goreng noodles in the cupboard that I must take to work tomorrow... found out a week ago that they both have Wikipedia pages too :p

Nice to know Im not the only one who likes late-night snacking :D

Smashed Potatoes sound great, and although Im not a tuna fan, that spice would be nice :D
