Cook veges of choice - peas, carrots diced, corn kernels, capsicum diced - whatever you like. Scramble a couple of eggs. Get some leftover meat - chicken or whatever your preference is, and chop small. Add a small amount of oil to your pan and throw in the veges, stir around for a bit, add meat then rice. Stir for a minute or 2, add a tbsp or so of soya sauce and the egg. Mix. Serve. Minimal salt and minimal fat. I don't add salt because of the soya sauce. |
