Also, Calibri (Office 2007's default font) is much better than Times New Roman.

There would be nothing stopping a person with Office 2003 making a new normal.dot default template though with whatever default font turns them on.

I know that, but Calibri looks ugly in Office 2003 (which the school has).

I find the thing most people don't seem to like at first with Office 2007 is learning the ribbon. It's very user friendly once you get used to it but there is a learning curve. Ribbon Hero is quite a fun way to learn about the ribbon:

Speedy, I think Office 2010 64bit should work fine for home users and power users from what I've seen (I'm using the beta) but in corporate environments there are often lots of plug-ins that might not work until they are updated to 32bit. You might already have seen the in-depth article about it here:
