You guys are great, but I knew this would happen -

2 said that cast iron was better than solid steel,
1 said that cast iron was better than stainless steel,
1 said that cast iron was best but didn't say what else they had tried,
1 said enamel was best but didn't say what else they had tried and

33 didn't answer the original question.


I love this forum and all you guys - I'll let you know what I decide. ;)

I know I hijacked it - but my first answer was:


I have a Weber with both stainless wire and cast iron grates . I prefer the cast iron .
. . . . which was the #3 post . After that it kinda fell off the tracks - well, not really!

Flat-iron cooking a steak is as good as boiling the box it came in, which I think is an Olde English delicacy anyway . I don't care if it's on a piece or iron, aluminum or the hood of a car - it's sacrilege to cook steak that way - with or without mint sauce!

But all in all - it was still about BBQ-ing and I don't see the answers went too far astray .

We are gonna get snow tomorrow and just to make you wince, I'll be out there BBQ-ing a couple of very rare Ribeye steaks (known as an entrecote in French bistros) that are much more than 3/16th of an inch thick .

Notice the marbling in that cut!

I was watching the "Hell's Kitchen" UK-version on BBC here in my place last night and saw Gordon Ramsay ( . wikipedia . org/wiki/Gordon_Ramsay" target="_blank">en . wikipedia . org) chewing tail on a few wanna-bees, and what caught my attention was that they actually fried steaks in a roasting pan in the oven!

Is this the way youse guys destroy beef? Without flames actually licking on the beef, it ain't cooked correctly .

Gads! That's as bad as boiling liver to cook it . :drool

That's usually the way you cook a good sized fillet Joe; you need to sear the outside to give the fillet some nice caramelized flavours and then put it in a moderate/hot oven (350F) for about 10 minutes; if you try to cook it only on the grill it will overcook on the outside and still be raw in the middle .

Not such a problem with thinner cuts though .

Rare steak to me just means raw cant stand seeing the blood. Some people eat it so rare its still mooing and starts eating the greens on the plate

836472 2009-12-06 09:32:00 If my steak arrives rare I always send it back to be cooked properly, they are just increasing throughput by giving people barely cooked meat. Love it when has burnt outside and absolutely no juice on inside, cooked all the way through in other words. zqwerty (97)
