Ingredients:
Lean leg lamb joint
Butter
Sugar
Nutmeg
Lemon zest and juice
Rum
For the Cumberland sauce:
Red onions
Rum
Redcurrant jelly
Orange zest and juice
Worcestershire sauce
Take a 1.25kg(2lb) lean lamb leg joint and calculate cooking time. Time to cook: Medium - 25 minutes per 450g/kg(1lb) plus 25 minutes, well done - 30 minutes per 450g/ kg(1lb) plus 30 minutes. Oven temperature: Gas mark 4-5, 180C, 350F. Place on a rack in a roasting tin and open roast in a preheated oven for the calculated cooking time.
Meanwhile make the rum butter.
In a bowl mix together 100g(4oz) butter, softened, 25g(1oz) caster sugar, 2 pinches nutmeg, zest of 1 lemon and juice of and 30ml(2tbsp) rum.
During the last 30 minutes of cooking time spread the butter over the lamb and return to oven.
While the lamb is cooking make the sauce. In a pan soften 2 red onions, sliced for 5-6 minutes. Add 150ml(pt) rum, 30ml(2tbsp) redcurrant jelly, the zest and juice of 1 orange and 5ml(1tsp) Worcestershire sauce. Bring to the boil and simmer for 5-10 minutes until the sauce has reduced and thickened.
Serve the lamb with seasonal vegetables, new potatoes and the Cumberland sauce.

875383 2010-04-14 00:09:00 Ive stayed away a bit as I tend to be pretty rough as some can't tell the difference between a joke/sarcasm and they also haven't figured out that people are not the same.
I think amongst the bickering of late though, there is a few man hugs going on in the undertones, I say we should find a new topic each about something we enjoy instead of the constant news references to bashings, killings and corruption.

We should have a feel good day, then return to "Cut his head off!". :lol:

I have nothing at all against the average American as they are people much like us and have met some really good sorts over the years. Maybe a tad more brainwashed into a way of thinking that does tend to drive some of us crazy at times.

I'll post some pixs of my apple trees that are just starting to bloom next time . I have a Black Apple tree that produces fruit that isn't really edible unless you have cast iron teeth; they make great pies and turnovers though .

You are a musician fer cryin' out loud! You have to be a little edgy to make it work . Don't go into a dark corner full of angst - come on out into the cold light of day (or night) and get it off your chest .
