Would Windows 7 running with 2GB ram do the job?

Yeah, I'd consider 1GB to be the minimum and 2GB+ to be preferred. Anything lower than 1GB will probably drive you insane.

Anything lower than 1GB doesn't meet Windows 7's requirements anyway :p
