No, but you do need some good quality diamond hones, which you should have anyway if you're serious about your knives. I've been cooking as a serious amateur for nearly 20 years now, and I love Global - they are expensive, but they'll last for donkey's years if you look after them. The most overlooked thing is how they feel in the hand; everyone's hand-size is different, as is their grip, so head to a kitchen supples place and handle a few. Make sure it's well-balanced, and a good weight. You don't need a lot of knives either, so don't bother with a set; start with a chef's knife (www.cutleryandmore.com), and a paring knife (www.cutleryandmore.com). Then I'd look as something like this (www.cutleryandmore.com). |

I bought one of these Cutco hunting knives (www.cutco.com) over 40 years ago and it stayed perfectly sharp until the very end (it was stolen  two years ago). Actually I did not think about replacing it until now, but the web site does not list prices so I will have to ring a shop in the USA. Anyhow, check the Cutco guarantee (www.cutco.com) - cannot beat that!! BTW, I bought that knife from a classified advert in the back of Popular Mechanics magazine and I remember it stated that the knife was guaranteed to stay sharp for life. When I ordered it my dad thought it was a rip-off and I had the pleasure of reminding him many years later what a good buy it was. |
