I baked a purple kumara in the oven for about 20 mins today. Upon cutting it open afterwards, i noticed the kumara had a purplish core in the middle, very hard, cant really be eaten. Never seen this before in any of the other kumara i cooked (even other purple ones).

1226700 2011-08-28 20:22:00 Kumara should be stored in a cool, dark place that is well ventilated . Ideally the temperature should be 13-17°C with a relative humidity of 75-80% .

Kumara should never be refrigerated or stored at less than 12°C as this will result in chilling damage which results in shrivelling, increased decay, surface pitting and sometimes causes a hard core to develop . This hard core will fail to soften during cooking .

Sprouting becomes a problem at higher storage temperatures . Kumara are ethylene sensitive so store separately from ethylene producing fruits and vegetables .

1226704 2011-08-29 01:20:00 Thing is, i didnt refrigerate it...i put it in a kitchen cupboard and only stored it in a plastic bag with other kumara.

And yea its too late for photos(its in the rubbish bin now). Will take some if i ever see it again though.
