| 1250469 | 2011-12-24 04:44:00 | I did a pavlova today (a nine egg one, since we have so many tomorrow!) and a delicious potato salad from a recipe from a good mate's wife's grandmother in Czech Republic. The potato salad is virtually a meal in itself.... Plus we'll be having some cold ham, roast turkey and some green salads :yuck: All washed down by copious amounts of cold beer.... Babs Potato Salad Boil about 750g potatoes with the skins on. Let cool and then peel. After you have all the other ingredients in a big bowl, slice the potatoes into cubes about 0.5cm each (I was given a special potato cutter to push the potatoes through). ******************* Boil 2 carrots, celeriac, parsnip (celeriac and parsnip optional seasonal, personal taste) Coolish veges cut into small cubes and place in the big bowl Onion finely chopped (can be eaten raw, or if you prefer, gently simmer with a bit of butter but do not brown) 2 3 boiled eggs (again, cubed) Pickled gherkins at least 4 largish ones according to taste (chopped up into pea-sized pieces) One cup of frozen baby peas 150 200g of ham finely chopped ************************ Mix gently together using your hands. Mix in mayonnaise according to taste, so that everything is coated. Black pepper, salt, vinegar and mustard (optional, according to taste) - I use a couple of (big) teaspoons of Dijon and 3-4 teaspoons of wholegrain mustard... Leave covered in fridge overnight (if you can wait that long! :drool) |

| 1250471 | 2011-12-24 06:10:00 | Doing a traditional Christmas dinner this year. Roast boneless rolled lamb cooked with garlic and rosemary. Accompanied by crispy roast potatoes, pumpkin, kumura and buttered beans. Chased down with fruit pudding with custard and cream. Did a pre-Christmas dinner last weekend too for those family members heading out of town. That was cold chicken and ham with a variety of salads: french beans with cranberries, pumpkin with honey balsamic dressing and potato salad. Dessert was trifle and pavlova with fresh fruit. Yum! |
