"Rotary Club of Dunedin has always been thrilled to receive it and forwards fruit to needy people.

"They use the lemons for drinks, especially at this time, of the year while the grapefruit is made into jam. Last year we sent four bins - one year we sent eight and they sent some onto Wānaka and to Queenstown."

Not quite what I was thinking. Marmalade not jam. Yuk. What if they just want the fruit? And what about other areas? I used to send lemons to my friend in Canterbury................

2 eggs, plus 2 egg yolks
3/4 cup (165g) Caster Sugar
1/3 cup (80g) chilled Butter
Zest and juice of 2 lemons


Could be called lemon flavoured lolly goop.

Jam is generally 50/50 although I make it 70/30 (30% sugar that is...)

the trouble with lemons is high acid content. you need a lot of sugar to balance that out.
its like honey (~88% sugar) but it doesn't taste all that sweet due to high acid content (not quite as high as lemon).

1472008 2020-10-02 19:20:00 My mum likes lemons. She squeezes the juice onto almost everything I cook. And her salad for example...no mayonnaise or dressings...just lemon juice.
She also has water, and squeezes lemon into that too.
No sugar at all.

I make lemon muffins now and then...with both the juice and the zest...I don't add extra sugar though and they're fine. My brothers favourite.
