Technically you can, just the likes of the Play Store / Gmail / Gtalk etc (Known by ROM-modders as "Gapps").

Doesn't matter, it'll still sync if you tick it in the settings, so Contacts will be backed up if you want, even if you don't "use" Gmail.

You can skip it, it's not mandatory, never has been :)

Not yet, first tried Sprite Export Manager.
It saves in csv & xml format.
Neither of which I have had any great sucess converting to be readable on a pc.

I'll try the sprite next.
Not quite as easy.
I'll need swmbo's mobile.

Sync to Gmail and they're instantly readable on the Desktop, not to mention there are also export options
