1307024 2012-10-15 06:19:00 Ok, I’ve been given a Still and all the gear to make my own Spirits (Gin) :clap

Now, the question is, if my first "Wash" produces 80% Alcohol, how much water should I add to bring the Alcohol content back to say 45%? (Leaving it at 80% would make me sillier than I already am) ;)

Given that I don’t know how much Alcohol I’ll get out of the first "Wash" lets use a parts per hundred ratio.

Now, seeing as no two brews will ever be the same, I’d like to have a Spreadsheet, which, having entered the uncut Alcohol Percentage, I can then enter the desired Alcohol Percentage and it would tell me how much water to add to the Uncut Alcohol. (parts per 100)

But the trouble with percentages is you can’t just add and subtract them. :crying

1307025 2012-10-15 06:57:00 Sorry can't really help with that but make sure you ditch the first lot that comes out of the still.
You often hear of thirty or so people dying in Russia from someone new to spirit brewing.

1307028 2012-10-15 07:14:00 Toss out the first 50 ml. As its only good for glass cleaner. It's been a few years since I have done it, so can't give figures. Best bet is just dilute slowly until you get the desired level. I can't stress this enough. Use a carbon filter to filter out the alcohol, it is a must. No shorts cuts here please.

...I think.that does sound about right Jen. Another thing BM, once it starts getting below 80% that when I usually stop it. You can spend hours trying to get the dregs out. It becomes quite an art maintaining the correct water temp

...I think.That is wrong. It should be add 78mL of water to 100mL of 80% alc.

100mL x 80 (%) = 800
800/45 (%) = 178

1307032 2012-10-15 08:31:00 I think we are one of a few countries in the world where you can legally use a still to make home brew piss. I have always been sus about doing it after hearing stories of drinking piss that was the wrong sort of alcohol like Meths.

1307033 2012-10-15 09:22:00 Bah I don't have a still. Too hory to buy one and too un skilled to bother making one.

Depending on how much wash you make you'll want to cut the first 100ml or so (up to 400ml) since that will contain the higher volatiles (mostly methanol) which will boil off before the ethanol. Collect in small beakers/flasks first so you can measure your cut. Then collect the hearts in bigger bottles for aging, make sure they are sterile so as not to spoil the brew. Towards the end of the distilling run start cutting off the tails in smaller flasks/beakers as they will be less pure. Some people put them back into the next wash as a flavour enhancer or use them to boost alcohol content is stuff like beer or mead. Be careful as the tails, as with the heads can contain poisons.

Also, with your wash, when doing rum you should keep your yeast culture and put it in with the next ferment, Now I dunno with gin but that's going to help develop a strong culture and deeper taste in rums.

Have a look on brewing sites on how to do your gin, rum is best aged with charred oak (I did manuka once, came out ok). Dunno how they do gin.

Just wondering, it it a pot still or a reflux?
