We are looking to chop down a tree in our back yard, in order to make way for a new deck.

Its not a native, but is quite tall, so we're wondering if there's any law around cutting them down if they're over a certain size? Or is that just that you can't cut natives?

Yes of course.
1)Trim the branches so that it will fall the direction you want, ie you want it to fall east - trim the branches off the west.

2)Top it first if it's too tall to fall without crushing something on yours or neighbours property.

3)Don't mention the council.

1322539 2013-01-13 19:17:00 If it is big enough to give you any concerns either legal or safety wise get an expert to give you a quote. Could be a lot cheaper in the long run. Otherwise cut it down. You may be able to make a good video of it so we can all have a laugh. CliveM (6007)
