204173 2003-12-30 09:43:00 Quickest, safest, and EASIEST way to seperate egg yolks from the whites : break into hand, let white drain between fingers into one bowl, place yolk in other bowl.

ps. Always helps to have clean hands of course ;)

204174 2003-12-30 10:04:00 Easier still is to just crack the whole egg into a bowl and gently lift the yolk out. donna (1667)

My mother does this . We used to be threatened with all sorts of dire consequences if the oven door was opened before she took it out . :D

Chris, a tip for you: when you separate your eggs do them one at a time into a separate bowl by itself, not into a bowl that the other egg whites are in because if ANY yolk goes into the egg whites they are ruined .

You can purchase a plastic egg separator for a few dollars at kitchen departments in stores like K-Mart, The Warehouse etc if you find Greg's method tricky as sometimes the yolks get pierced on the sharp egg shells .

Another tip: for pavs make sure the bowl is spotlessly clean before beating the whites up and the sugar has to be thoroughly dissolved before you stop beating the mix . The recipe sites should tell you this though . :-)

If I'm not too late (and it's not mentioned in other posts) just crack the egg open onto a small saucer . Using your fingers, hold the yolk by cupping then around one side of the yolk while tipping the saucer into your mixing bowl .
