I would seriously consider separate (thermal) fax and laser printer for your business operations as they are critical to communication and billing. Yes, plain paper faxes are sexier, but may cost more to buy and run. I assume you want the scanner more for personal use,and colour printing can be taken care of by a cheap CANON printer with the advantages of separate ink cartridges that come full, plus reliable operation, just stay away from refills. I'd go for an HP laser too in the 1300 series. For the same price as a single multifunction unit you will get distributed failure risk, and far cheaper b&w printing. Ink costs for a multifunction unit used for scanning, copying and general printing will be far higher than a laser plus small inkjet too. Buy all from one shop and you can negotiate a package deal that should beat the multifunction hollow, that is unless you are looking for the cheapest multifunction, which would not be a very good idea.
