Goto
options-mail setup-send/receive

Check the box for schedule an automatic send/receive every xx minutes.

To ensure outlook dosent keep checking your email set the minutes to 1440.

What version of Outlook is that Steven? I have Outlook 2000 and those options are not available. You are not by any chance referring to Outlook Express are you?

Another way to do it is to go tools-send/receive settings-Define Send/Receive Groups

Then check the box for schedule an automatic send/receive every xx minutes.

This only applies to outlook 2002 & 2003.
