Does anyone have a dough recipe for Panini or Ciabata? Tried & tested, suitable for a Panasonic breadmaker. PJ

Well, the best ciabata I ever made was by hand and using the no-knead recipe.

It really is so easy a 5 yr old can do it...in fact there's a video somewhere showing some womans 5 yr old doing it.
Google no-knead and skip the horrible bread maker.

Sorry pctek - it sounds like the most awful bread that could be made somewhere between an utter failure and an abysmal failure ever encountered!

Special bread is "special" - and any "women's" attempts are doomed to failure unless done by a decent practiced home baker.

Ask your mum!

Are you kidding? My mum never made bread. I made this and told her and she had a go at it.

3 cups of bread flour in a big bowl.
1/4 teaspoon of instant yeast:
1 teaspoon of table salt
Add 1-1/2 cups of lukewarm water.
Stir, yes it will look wet and gooey.

Cover and let the dough sit for 12-20 hours on counter or in a nice, warm, cozy place.

Preheat your baking dish. Slip a covered pot into the oven. Crank up the heat to 250C. Let it pre-heat for 30 minutes or longer.

Make sure that the pot can withstand the heat. GUse a 5-qt or larger cast iron, ceramic, Pyrex, stainless steel or enamel pot.

Round, oblong – doesn’t matter. Should be tall. I use my emameled cast-iron. After pre-heating, remove the hot pot from oven.

If you’re using parchment, just lift the entire parchment with dough and place into the pot with the parchment paper on bottom.
This prevents the dough from sticking to the pot.

Cover and put back into the oven. Bake covered for 30 minutes or so. Then uncover and bake further for 15-20 minutes. To check – you can either tap the bread (should sound hollow)
Remove and let cool.

Panini dough is a simple white dough, any breadmix should work. Go to Bin Inn and make your choice from their selection of pre mixes.
If you want to make your own mix, here is the basic formula...
Weigh your Flour, add 1% dry active yeast 1% bread improver (from Bin Inn), 2% salt, and 50 - 60% water. (depends on how soft you want your dough)

example:
For 2 kg of dough:
2 kg High grade flour
20g yeast
20g improver
40g salt
1200mls water

That should work for any basic white bread.
